Friend. Best armor set up in game is gyrm/cow witch. This has been a thing for years now. Both can have up to 96 poise, 1000~ physical defense, and 20-50% elemental defense depending on stats and rings. Min-maxing defence is less important than poise, so just slap on an Old Knight armor and you're good.
