The rapier has better dex scaling and the estoc has more raw dmg. BUT with a simple infusion the RAPIER AND ESTOC HAVE THE SAME SCALING. So if you're building a magic user go for the estoc and if you're going for faith or flat dex go with the rapier. Hope this helps you out.
